Well, I had some chocolate buttercream left over from yesterday when I used it for my "Germany" cake, so I needed to figure out what to do with it! Besides eating it straight out of the bowl...hmmm!

See what I mean about the food colourings you get here....they just don't turn out bright enough and the red always ends up as pink, no matter how many tubes you use!

I have decided to order decent proper gel colourings...no more faffing around!








So, it was my lovely friend's birthday at the weekend and since I'll see her tomorrow...I figured it would be nice to bake her something and of course it has to be chocolately! And I got to use up the (well some) chocolate buttercream.


 
 
 
 
So, I made a version of the chocolate and hazelnut cupcakes from the Hummingbird Bakery cookbook.

I wanted to tweak the recipe a bit by using Baileys instead of milk in the recipe, or part Baileys ...but I discovered that when I went to add it (the Baileys) that the cupboard was bare....none left at all.

I'd drank it at some point. sigh!

Oh well!

They're still yum.....buttercream, sweets and good ole sprinkles on top never fail!

Hope she likes them.

Not to self.....big bottle of Baileys on the shopping list!
